Confetti Cookie Dough Ice Cream Sandwiches

Summer is coming to an end, but that doesn’t mean you need to give up on your favorite ice cream treats. These confetti cookie dough ice cream sandwiches are so extremely yummy, and with the colorful sprinkles, they are simply too fun to resist! Truly, they are the perfect treats for a party or just to have on hand for those Netflix and “chill with ice cream” nights.  🙂

I love making my own ice cream, which you could totally do, but this recipe uses your favorite store bought ice cream (easy!). I did, however, add fresh berries to the ice cream to complement the flavor. Personally, I enjoyed adding cherries to cherry ice cream and blueberries to blueberry ice cream. The chunks of berries really make these look extra special and provide an extra pop of flavor, too.

Helpful Tip

One helpful tip is to make sure these are frozen completely solid before attempting to slice into squares. And I mean SOLID. Usually the freezer in your fridge won’t get them solid enough, so putting them in the deep freeze, if possible, is best. With a knife that has been soaking in hot water, you can cut them as easy as butter.

For the dough I used with the blueberry ice cream, I actually melted the chocolate to make the dough even chocolatey. I love how the two varieties look served together.
